UGALI AND SUKUMA WIKI (kale) for two adults
Equipment:
        I.            Two Cooking pots
      II.            knife
    III.            crater
    IV.            heat source
      V.            chopping board
    VI.            water
  VII.            basin
VIII.            cooking oil
    IX.            salt
      X.            cup

Ingredients

Ugali
a)      Ladle
b)      Cooking pot
c)       A jag of Water
d)      Plates
e)      Kitchen glove/ cooking pot holder
f)       Maize flour

Sukuma wiki
a)      Kales chopped in edible strands
b)      One onion (chopped)
c)       Three tomatoes (crated)
d)      Cooking oil
e)      Salt

HOW TO COOK
Ugali
        I.            Pour two full cups in a cooking pot and wait till boil point
      II.            Add a handful of flour in the boiling water
    III.            Let it boil a little until it forms form
    IV.            When about to pour over stir constantly with ladle
      V.            Now continue adding flour as you stir making a kind of dough
    VI.            Make sure the heat is constant
  VII.            You will need to hold the cooking pot firmly because stirring requires some energy
VIII.            Make the dough until there is a bake smell and the dough is hard
    IX.            Make a ball like dough and present on a plate


Sukuma wiki (kales)
        I.            Place the cooking pot on the heat source, place some cooking oil
      II.            Add the onions once the oil is hot enough
    III.            When the onion is about to brown add the kales
    IV.            Let it simmer for a while about 2mins
      V.            Add the tomatoes and stir mixing the contents
    VI.            Add salt to taste and let it cook for about 2mins
  VII.            Serve hot alongside the Ugali

NOTE: best eaten with bare hands for maximum sweetness and satisfaction. You can add whatever spices you please in the cooking process.

recipe for Uji (porriage)

equipments/ingredients heat source cooking pot  cooking spoon bowl and spoon sugar milk sorghum flour/ maize flour cup water and jag lemon Process add some flour in the bowl and some water/ cup size make a light paste with the mixture, put it aside meanwhile boil water on the cooking pot one cup of paste takes two cups of boiled water when the water boils, add the paste and stir constantly keep stirring and keep the heat constant when it boils, signaled by bubbles add some milk and sugar to taste, and some lemon juice make to taste and serve hot NOTE: best drunk with a big cup

TRADITIONAL LUHYA SPICE

I actually don't know what it's called in English but it's like vinegar/soda bicarbonate, that you add to traditional greens like omurenda , livubi , the famous terere , just ask anyone in Kenya they know them. Now to my point, all you need is a clear container, water, ash and a sieve. The ash must be fine just from firewood but some people still make it with charcoal ash. Anyhow it's your choice, so after mixing, remember not too much water, 500ml is okay with little wood ash. after mixing let it settle for some days, the ash will sink and the water looking like alcohol or cooking oil will be on top. Then sieve into another container and store the ash for recycling another day.
